Let the CNY Celebrations Begin!

As per tradition, I love to DIY some Chinese New Year goodies for family and friends. This year, I decided to do my all time favourite goodie – pineapple tarts. Coincidentally, Xxm’s school is asking for some food donations for their school celebrations. This is what I came up with.

Just for the kids, I decided to decorate each tart with an alphabet sprinkler. Xxm had the honours of donning each tart with an alphabet. He relishes in this activity. Too bad my hands are full to capture any pictures in progress. In fact, he also helped me roll the pineapple paste into a ball as well. Through this, Xxm mastered the ability to roll dough into a ball. Initially, he was using both his palms and fingers in an attempt to shape the paste into a ball. I implored him to concentrate the action on his palms instead. He was so delighted when he finally got it right. But kids will be kids. Subsequently he got bored with the routine and decided to build snowmen out of my pineapple paste instead.

After an afternoon, we ended up with three full tubs of pineapple tarts.

The boys love their tarts, as much as I do. I cannot be happier.

If you love pineapple tarts with a buttery, melt in your mouth crust, do try out my recipe which I have tried and tweaked over the years.

Ingredients:
• 375g plain flour/ 200g plain flour + 175g top flour
• 40g milk/cake powder
• 250g salted butter
• 2 eye yolks (for batter)
• 2 eye yolks (for brushing)
• 1/2 teaspoon salt
• Phoon Huat Redman pineapple paste

Instructions:
1. Sieve flour & milk powder.
2. Rub butter & salt into the flour until batter resembles bread crumbs
3. Mix in the egg yolks and knead into a dough

Baking Time • 180°C ; 9−12 min
